The Sous Chef assists the Executive Chef in overseeing all culinary operations across multiple hotel outlets, including breakfast, lunch and dinner, in-room dining, concierge, and banquet events. This position ensures consistent food quality, presentation, and adherence to Marriott brand standards, while leading and developing a team of culinary professionals to deliver exceptional guest experiences.
Your responsibilities will include but not limited to:
Support daily culinary operations across all outlets: breakfast, lunch, dinner, room service, and banquets.
Lead kitchen production and execution during peak service periods.
Ensure compliance with Marriott brand standards, recipes, and presentation guidelines.
Coordinate with the Executive Chef to plan menus, specials, and seasonal offerings.
Supervise daily prep and production schedules to ensure food availability and efficiency.
Monitor banquet event orders (BEOs) and ensure proper food preparation, staffing, and execution for group functions.
Train, mentor, and supervise culinary associates, ensuring proper technique, portion control, and sanitation.
Support recruiting, scheduling, and performance management in partnership with the Executive Chef.
Foster a positive, team-oriented kitchen culture aligned with Marriott service values.
Lead pre-shift meetings and communicate effectively across departments.
Maintain high standards of food quality, consistency, and presentation across all hotel outlets.
Assist with food cost management, inventory, and waste reduction initiatives.
Help monitor labor costs, ordering, and vendor relationships.
Participate in monthly inventory counts and cost control initiatives.
Ensure compliance with all local health department regulations, Marriott safety standards, and sanitation procedures (HACCP).
Maintain a clean, organized, and safe work environment at all times.
Oversee proper storage, labeling, and rotation of all food items.
Ability to stand for extended periods and work in a fast-paced kitchen environment.
Must be able to lift up to 50 lbs.
Flexible schedule including nights, weekends, and holidays.
Culinary degree or certification from an accredited culinary school preferred.
Strong knowledge of banquet production techniques, menu planning, and event service standards.
Ability to manage multiple events simultaneously and adjust to guest needs in a fast-paced environment.
